Barrel Preservation Mix
When dissolved in 8L (2 gal) of water, this mix of potassium metabisulfite and citric acid produces sulfurous gasses, which kill and prevent bacteria and mold during long-term storage of barrels which are not filled with spirit.
Taking care not to breathe in the powder and working in a well-ventilated area, cut open and empty this packet into your barrel, fill with water, and close it up for storage for up to 6 months.
When you are ready to use your barrel for spirits, dump this solution out, and completely fill and drain out the barrel three (or more) times with plain water.

Have not tried yet but glad to find it.
The uncharred used sherry barrel seemed like a perfect match to age a batch of brandy. I'm hopeful the sherry notes will blend well with the flavors in the spirit no elevate it to another level. I love the new mallet and used it to seal the bung in this barrel.
